Tasting Note

91   1994  Stag's Leap Wine Cellars  S.L.V. Napa Valley Cabernet Sauvignon  1/1/10 ($50)

  13.6% alc
Color: Deep garnet with a little onion skin and clearing. Looks ready. (3.0) Bouquet: Cassis and pencil shavings with a touch of cocoa and very good acidity. Elegant. (3.0) Body: Middleweight with excellent chalky acidity, very good fruit and some tannin. The chalky acidity sticks out a little with a lean, tannic mouthfeel. (3.0) Flavor: Very good cassis fruit with lively, black pepper tannins backing up excellent acidity. (3.0) Finish: Big cassis finish with dry, but interesting tannins. Has more persistence and size here than everything that came before. (3.5)
Overall: An excellent CA Cab that has a duel personality. The bouquet, body and flavor taste like a wine on the far side of peak, i.e., could be bigger and richer. Then, a powerful finish hits you in the head with lots of fruit, life and tannin. So, I'm not sure if it will get better, but it could in the next 1-3 years. (15.5)
