Tasting Note

93  2009  Inflorescence (Cedric Bouchard)  Blanc de Noirs Brut - Val Vilaine    1/1/13 ($60)

100% Pinot Noir  12.5% alc    disgorged April 2011
Color: Light yellow with small bubbles. (3.0) Bouquet: Brioche, mineral and tart pear. Elegant, but concentrated. (3.5) Body: Light heavyweight with excellent fruit and acidity. Rich, tangy mousse. (3.5) Flavor: Parallels bouquet step-for-step. (3.5) Finish: Crisp, tangy mineral/fruit lingers, but not as concentrated here and a little short. (3.0)
Overall: Excellent Pinot Noir flavor intensity with surprising elegance. Drinks more like a serious still wine from Chablis or the Loire than typical Champagne, due to no dosage. Should gain more complexity in the next 5 years. Serve this at cellar temp (50-55 °F) to taste all that's there. This is a joy to drink. (16.5)
