Tasting Note

91+   1999  Dominus Estate  Napa Valley (Christian Moueix)   2/27/15  ($100)

75% Cabernet Sauvignon, 13% Cabernet Franc, 9% Merlot, and 3% Petit Verdot.   14.1% alc
Color: Deep garnet with some browning, but no clearing. (3.5) Bouquet: Cedar (slightly charred) with iron and blood complementing cassis fruit. Also shows spice from cedary oak and black pepper tannins. Somewhat austere. (3.0) Body: Heavyweight with big tannins. Has excellent cassis fruit to meet, but significant cedar combined with dry tannins slightly overwhelm the fruit at present. Coats mouth nicely. (3.0) Flavor: Tobacco-infused cassis fruit with lots of cedary tannins. (3.5) Finish: Parallels flavor, but shows bitterness due to tannins and oak. (3.0)
Overall: This is still backward and austere at over 15 years old due to big tannins. Has enough cassis fruit to meet, but needs another 5-10 years. Just pray the fruit holds that long. (16.0)
